  • 3 pounds top sirloin roast
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, mix together the minced garlic, olive oil, dried thyme, dried rosemary, salt, and black pepper.

  3. Rub the garlic-herb mixture all over the top sirloin roast, making sure to evenly coat it.

  4. Place the roast on a roasting pan and insert a meat thermometer into the thickest part of the roast.

  5. Roast the beef in the preheated oven for about 1 hour 30 minutes, or until the internal temperature reaches your desired level of doneness. For medium-rare, aim for an internal temperature of 135°F (57°C), for medium, aim for 145°F (63°C).

  6. Once the roast has reached the desired temperature, remove it from the oven and let it rest for about 10 minutes before slicing.

  7. Slice the roast against the grain and serve it with your favorite side dishes.
