How To Make Roasted Lamb Breast

Ingredients

  • 2 lb lamb breast
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 325°F (163°C).

  2. Score the fat side of the lamb breast with a sharp knife, making shallow cuts.

  3. In a small bowl, mix together the olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper.

  4. Rub the spice mixture all over the lamb breast, making sure to get it into the cuts on the fat side.

  5. Place the lamb breast in a roasting pan and cover tightly with foil.

  6. Roast in the oven for 1 hour and 45 minutes.

  7. Remove the foil and increase the oven temperature to 425°F (218°C).

  8. Roast for an additional 15 minutes, or until the top is crispy and golden brown.

  9. Remove from the oven and let the lamb breast rest for 10 minutes before slicing.

  10. Serve hot and enjoy!
