  • 4 salmon fillets
  • 4 cod fillets
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the salmon and cod fillets on a baking sheet lined with parchment paper.

  3. In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, paprika, dried thyme, salt, and black pepper.

  4. Brush the mixture evenly over the fillets.

  5. Roast in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

  6. Garnish with fresh parsley before serving.
