Got leftover roast beef? This easy fajita recipe turns juicy and spiced beef into a quick Mexican dish with tortillas and gravy.

Ingredients

  • 2tbspcanola oil
  • 1largeonion
  • 1largered bell pepper
  • 2largegarlic cloves
  • 1tbspchili powder
  • kosher salt and freshly ground pepper,to taste
  • ½*Coriander-Dusted Roast Beef,(see Recipe Notes for recipe) or roast beef
  • ¼cupreserved gravy from the roast beef,or other beef gravy
  • 8flour tortillas,warm
  • salsa

Instructions

  1. In a large skillet, heat canola oil until shimmering. Add onion, bell pepper, garlic, and chili powder and season with salt and pepper.

  2. Cook over high heat for about 5 minutes, stirring, until softened and browned in spots. Add beef and gravy and cook for 1 minute, stirring, until just heated through.

  3. Serve beef and vegetables in warm tortillas with salsa, sour cream, and cilantro.
