Ingredients

  • 1.5 kg shoulder of pork
  • 2 tbsp olive oil
  • 4 cloves of garlic, minced
  • 2 tbsp dried thyme
  • 2 tbsp smoked paprika
  • 1 tbsp brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 150°C (300°F).

  2. In a small bowl, mix together the minced garlic, dried thyme, smoked paprika, brown sugar, salt, and pepper.

  3. Place the pork shoulder in a roasting pan and rub the olive oil all over it.

  4. Spread the garlic and spice mixture evenly over the pork, pressing it into the meat.

  5. Cover the roasting pan tightly with foil and roast in the preheated oven for 4 hours.

  6. After 4 hours, remove the foil and increase the oven temperature to 220°C (425°F).

  7. Roast the pork uncovered for another hour, or until the skin is crispy and golden.

  8. Remove the pork from the oven and let it rest for 10-15 minutes before carving.

  9. Serve the slow-roast shoulder of pork with your choice of sides and enjoy!
