- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat the oven to 275°F (135°C).

Rinse the chicken thoroughly and pat dry with paper towels.

In a small bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper.

Rub the mixture all over the chicken, making sure to get it under the skin as well.
