  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


  1. Preheat the oven to 275°F (135°C).

  2. Rinse the chicken thoroughly and pat dry with paper towels.

  3. In a small bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper.

  4. Rub the mixture all over the chicken, making sure to get it under the skin as well.

  5. Place the chicken on a roasting rack in a roasting pan.

  6. Roast the chicken in the preheated oven for about 2 hours, or until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer.

  7. Remove the chicken from the oven and let it rest for 10 minutes before carving.

  8. Serve the chicken with your favorite side dishes and enjoy!
