How To Make Simple Beef Pot Roast Recipe

  • 2 pounds beef chuck roast
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, peeled and cut into chunks
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary


  1. Preheat the oven to 325°F (162°C).

  2. Season the beef roast generously with salt and pepper.

  3. Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat.

  4. Sear the beef roast on all sides until browned, approximately 3-4 minutes per side.

  5. Remove the roast from the pot and set aside.

  6. In the same pot, add the sliced onion and minced garlic. Sauté until the onion is softened and translucent, about 2-3 minutes.

  7. Add the sliced carrots, celery, and potatoes to the pot. Stir and cook for 2-3 minutes.

  8. Return the beef roast to the pot, placing it on top of the vegetables.

  9. Pour in the beef broth and Worcestershire sauce.

  10. Add the fresh thyme and rosemary sprigs to the pot.

  11. Cover the pot with a lid and transfer it to the preheated oven.

  12. Cook for approximately 3 hours, or until the beef is tender and easily shreds with a fork.

  13. Remove the pot from the oven and let it rest for a few minutes before serving.

  14. Serve the beef pot roast with the cooked vegetables and a ladle of the flavorful cooking liquid.
