How To Make Roasted Seasoned Winter Squash Medley

This winter squash medley is a great vegetable side that pairs well with turkey or chicken. The dish is seasoned with cayenne & paprika for a spicy twist.

  • 1tbsponion powder
  • 1tbspgarlic powder
  • ½tspsmoked paprika
  • ¼tspcayenne pepper
  • ½tspkosher salt
  • 2tspbrown sugar
  • 2lbsmixed winter squash,(butternut, kabocha, etc.), peeled and cut into ¾ –inch cubes
  • 1tbspunsalted butter,melted
  • 1tbspolive oil


  1. Preheat oven to 400 degrees F.

  2. In a small bowl, combine the onion powder, garlic powder, smoked paprika, cayenne, salt and brown sugar.

  3. In a large mixing bowl, toss squash with butter and olive oil.  Add 1 tablespoon of the spice mixture to the bowl and toss well to coat.

  4. Place squash on a sheet pan lined with parchment and bake for 40 to 45 minutes, tossing every 15 minutes, to allow for even browning. Sprinkle with 1½ teaspoons more of the spice mixture.  Toss gently to coat and serve hot.
