How To Make Roasted Asparagus with Balsamic Vinegar

The balsamic vinegar makes the perfect dressing for this light side dish.

Ingredients

  • 1 lb fresh asparagus, 12-14 medium-sized, trimmed and peeled
  • 1 ½ tsp olive oil, preferably extra-virgin
  • 1 tbsp balsamic vinegar
  • salt, to taste
  • pepper, to taste

Instructions

  1. Preheat oven to 500 degrees F.

  2. In a large shallow baking pan, toss the asparagus with oil and salt and pepper to taste until coated well.

  3. Roast asparagus, shaking the pan every 2 minutes, for about 10 minutes or until tender and lightly browned.

  4. Remove pan from the oven and drizzle vinegar over asparagus, shaking the pan to combine well.
