  • 2 pounds beef roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp flour
  • 1 cup water


  1. Preheat the oven to 350°F (175°C).

  2. Season the beef roast with salt and pepper.

  3. Heat the oil in a large skillet over medium-high heat.

  4. Sear the roast on all sides until browned.

  5. Transfer the roast to a roasting pan and add the sliced onion and minced garlic.

  6. Pour the beef broth into the pan.

  7. Cover the pan with foil and roast in the preheated oven for 1 hour.

  8. Remove the foil and continue roasting for an additional 30 minutes, or until the roast reaches your desired doneness.

  9. Remove the roast from the oven, cover with foil, and let it rest for 15 minutes before slicing.

  10. In a small saucepan, whisk together the flour and water until smooth.

  11. Place the saucepan over medium heat and cook, stirring constantly, until the gravy thickens.

  12. Serve the sliced roast with the gravy on the side.
