  • 1 leg of lamb (about 3 pounds)
  • 4 cloves of garlic, minced
  • 4 sprigs of fresh rosemary
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of beef or vegetable broth


  1. Preheat the oven to 325°F (165°C).

  2. In a small bowl, combine the minced garlic, olive oil, salt, and black pepper to make a paste.

  3. Rub the garlic paste all over the leg of lamb, making sure to coat it thoroughly.

  4. Place the rosemary sprigs on top of the lamb and tie them securely with kitchen twine.

  5. Transfer the lamb to a roasting pan and pour the broth into the pan.

  6. Roast the lamb in the preheated oven for about 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

  7. Remove the lamb from the oven and let it rest for 10 minutes before slicing.

  8. Serve the roast leg of lamb with rosemary with your favorite side dishes.
