How To Make Roast Lamb and Potatoes (Arni Sto Fourno)
This delectable roast lamb and potatoes or Arni Sto Fourno is a Greek meat and potatoes dish, made with succulent lamb and tangy lemon potatoes.

Ingredients
- 1whole leg of lamb
- salt and pepper
- 1garlic head
- 1onion
- 1carrot
- 1fennel
- 3potatoes
- 4rosemary sprigs
- 4oregano sprigs
- 4thyme sprigs
- 4sage sprigs
- ¼cupdry white wine
- ¼cupwater
- olive oil
- ¼cuplemon juice
- 2lemons
Instructions

Season lamb with salt and pepper. Make slits in meat and push 3 or 4 cloves of garlic into meat.

Arrange the vegetables, remaining garlic cloves, herbs, and lamb in a roasting pan. Pour wine, water, and lemon juice on bottom of pan.

Cover with aluminum foil and bake at 325 degrees F for 1 hour 30 minutes, until pulling away from the bone.

At the last 15 minutes of baking, remove the aluminum and raise the temperature to 450 degrees F.

Allow the lamb and vegetables to brown, and dress with olive oil and squeeze the juice of the remaining 2 lemons onto the finished lamb and vegetables.
