
How To Make Roast Chicken and Vegetables

Ingredients
- 1 whole chicken (about 4 lbs)
- 4 carrots, peeled and cut into 1-inch pieces
- 4 potatoes, peeled and cut into 1-inch pieces
- 1 onion, chopped
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
Instructions

Preheat the oven to 425°F (220°C).

Place the chicken in a roasting pan and pat it dry with paper towels.

In a small bowl, mix together the salt, black pepper, dried thyme, and dried rosemary.

Rub the chicken with olive oil and sprinkle the spice mixture over it, making sure to cover the whole chicken.

Arrange the carrots, potatoes, onion, and garlic around the chicken in the roasting pan.

Roast the chicken and vegetables in the preheated oven for 1 hour and 30 minutes, or until the chicken is cooked through and the vegetables are tender.

Let the chicken rest for 10 minutes before carving. Serve with the roasted vegetables.
