These dill roasted potatoes are made of fingerling potatoes coated with a mixture of mustard, dill, salt, and black pepper for a simple yet elegant meal.

  • 1lbfingerling potatoes,halved lengthwise
  • 1tbspolive oil
  • 1tbspdijon mustard
  • 1tspdill
  • ½tspsalt
  • ½tspfresh ground black pepper


  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.

  2. Place fingerling potatoes in a large bowl. Whisk oil, mustard, dill, salt, and black pepper together in a measuring cup until well blended.

  3. Pour over potatoes and stir until evenly coated. Spread potatoes in a single layer on the prepared baking sheet.

  4. Bake in the preheated oven for 20 minutes. Turn potatoes and cook until potatoes are golden and crispy for about 10 more minutes.
