  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste


  1. Season the beef roast with salt and pepper.

  2. Set the pressure cooker to sauté mode and heat the vegetable oil.

  3. Brown the roast on all sides, then remove it from the cooker and set aside.

  4. Sauté the onion and garlic until tender.

  5. Add the carrots and celery to the cooker and cook for 2 minutes.

  6. Return the roast to the cooker and pour in the beef broth.

  7. Add the thyme, rosemary, and bay leaf.

  8. Close the pressure cooker lid and cook on high pressure for 60 minutes.

  9. Allow the pressure to release naturally for 15 minutes, then manually release any remaining pressure.

  10. Remove the roast from the cooker and let it rest for 10 minutes before slicing.

  11. Serve the pot roast with the cooked vegetables and a ladle of the flavorful cooking liquid.
