How To Make High Temperature Eye-of-Round Roast

  • 2 lbs eye-of-round roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme


  1. Preheat the oven to 500°F (260°C).

  2. Rub the eye-of-round roast with olive oil, salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.

  3. Place the roast on a roasting rack in a shallow baking pan.

  4. Roast the meat in the preheated oven for 20 minutes.

  5. Reduce the oven temperature to 325°F (163°C) and continue to cook for another 10 minutes per pound of meat for medium-rare, or until the desired doneness is reached.

  6. Remove the roast from the oven and let it rest for 10 minutes before slicing.

  7. Slice the eye-of-round roast and serve.
