
How To Make Hasselback Sweet Potatoes with Balsamic Glaze
These hasselback sweet potatoes makes an amazing low-calolie side dish! It’s roasted in the oven and drizzled with a savory balsamic glaze for extra flavor.

Ingredients
- 4medium sweet potatoes,7 oz each
- ½tbspunsalted butter,melted
- ½tbspolive oil
- ¼tspkosher salt
- freshly ground black pepper,to taste
- ½ozparmesan cheese,freshly grated
- 1tbspfresh oregano,chopped
- 1tbspfresh Italian parsley,chopped
- 1tspfresh thyme,chopped
- 2tbspbalsamic glaze,used Delallo
Instructions

Preheat the oven to 400 degrees F.

With a large, sharp knife, make ¼-inch slices down the length of each potato, cutting only ¾ of the way through.

In a small bowl, combine the butter and olive oil.

Place the potatoes in a medium mixing bowl.

Drizzle half of the the olive oil and butter mixture over theĀ top of each potato, then toss to evenly coat.

Place potatoes on a small baking sheet, then sprinkle with salt and pepper.

Bake for 50 to 60Ā minutes, or until the potatoes are tender inside and caramelized and crisp on the outside.

Drizzle with the remaining butter and oil, then sprinkle with parmesan, oregano, parsley, and thyme.

Serve with a drizzle of balsamic glaze, and enjoy!
