How To Make Easy Vegan Sheet Pan Roasted Vegetables
Easy to make in the sheet pan, these vegan-friendly roasted vegetables are made of cauliflower, tomatoes, and beans flavored with lime and garlic.

Ingredients
- cooking spray
- 1tbspolive oil
- 2clovesgarlic,minced
- ½tspsalt
- ¼tspground black pepper
- 4cupscauliflower,sliced
- 2cupscherry tomatoes
- 15ozgarbanzo beans,(1 can) drained
- 1lime,cut into wedges
- 1tbspfresh cilantro,chopped
Instructions

Preheat oven to 450 degrees F.

Line a baking sheet with aluminum foil and grease with cooking spray.

Combine the olive oil, garlic, salt, and pepper in a bowl.

Add the cauliflower, tomatoes, and garbanzo beans. Toss until well coated.

Spread in a single layer on the prepared baking sheet.

Add the lime wedges.

Roast in the preheated oven for about 25 minutes until the vegetables are caramelized.

Remove lime wedges and top with fresh cilantro.
