  • 3 pounds standing rib roast
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat the oven to 450°F (230°C).

  2. Rub the olive oil all over the standing rib roast.

  3. In a small bowl, mix together the salt, black pepper, garlic powder, dried thyme, and dried rosemary.

  4. Sprinkle the seasoning mixture evenly over the entire roast, pressing it into the meat.

  5. Place the roast on a rack in a roasting pan, bone side down.

  6. Roast the meat for 15 minutes, then reduce the oven temperature to 325°F (165°C).

  7. Continue to roast for about 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

  8. Transfer the roast to a cutting board and let it rest for 15 minutes before carving.

  9. Slice the roast and serve hot.
