  • 1½lbspotatoes,unpeeled, cut into 1-inch chunks
  • 2tbspolive oil
  • 1tspkosher salt
  • ¼tspblack pepper
  • ½cupparmesan cheese,grated
  • ¼tspdried thyme leaves

Instructions

  1. Preheat an oven to 400 degrees F.

  2. Place the potatoes into a mixing bowl, and drizzle with olive oil. Sprinkle with kosher salt, black pepper, Parmesan cheese, and thyme leaves.

  3. Toss to evenly coat, and transfer to a 9×13-inch baking dish.

  4. Bake in the preheated oven for about 1 hour until the potatoes are golden brown on the edges and tender when pierced with a fork.

  5. Serve hot or at room temperature, and enjoy!
