- 2lbscarrots,washed, peeled, and cut if large
- 2tbspolive oil
- 1tspkosher salt
- ¼tspfreshly cracked black pepper,plus more to taste, as needed
- parsley,chopped, for garnish, optional
Instructions

Preheat the oven to 425 degrees F, then line a baking sheet pan with parchment paper.

Toss the carrots with oil, salt, and pepper in a bowl.

Pour the carrots on the prepared baking sheet, then arrange them in a single layer.
