
How To Make Dijon and Avocado Rubbed Beef Tenderloin Roast
For this delicious beef tenderloin roast, the meat is seared, coated with mustard and avocado dressing, then roasted to the perfect doneness.

- 1tbspolive oil
- 4lbsbeef tenderloin,trimmed
- 4clovesgarlic
- 8ozDijon mustard,(¾ jar)
- 1ripe avocado,peeled and cubed
- ¼cupsteak seasoning
Instructions

Preheat oven to 400 degrees F. Line a roasting pan with a sheet of aluminum foil.

Preheat a large skillet over high heat. Pour in the oil, and heat until smoking.

Sear the tenderloin roast in the hot oil for about 5 minutes. until browned on all sides. Remove to the roasting pan when done.

While the roast is searing, place the garlic, mustard, avocado, and steak seasoning into a blender or food processor. Blend until smooth. Coat the seared roast all over with the avocado mixture.

Roast in the preheated oven for about 40 minutes for medium or until the tenderloin has reached the desired degree of doneness.
