Ingredients

  • 2 lbs bottom round roast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 2 large onions, sliced
  • 3 cloves of garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp all-purpose flour
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 325°F (160°C).

  2. Season the bottom round roast with salt and black pepper on all sides.

  3. In a large oven-safe pot, heat vegetable oil over medium-high heat.

  4. Sear the roast on all sides until browned, about 3-4 minutes per side.

  5. Remove the roast from the pot and set aside.

  6. Add the sliced onions and minced garlic to the pot and cook until softened, about 5 minutes.

  7. Stir in the flour and cook for an additional 1 minute.

  8. Gradually pour in the beef broth and Worcestershire sauce, stirring constantly to avoid lumps.

  9. Return the roast to the pot and cover with the onion gravy.

  10. Cover the pot with a lid and transfer to the preheated oven.

  11. Roast for about 2 hours, or until the roast reaches your desired level of doneness.

  12. Remove the roast from the pot and let it rest for 10 minutes before slicing.

  13. Serve the sliced bottom round roast with the onion gravy and garnish with fresh parsley.
