How To Make Awesome Red Wine Pot Roast

Ingredients

  • 2 pounds beef chuck roast
  • 1 cup red wine
  • 1 cup beef broth
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).

  2. Season the beef roast with salt and pepper.

  3. In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.

  4. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove from the pot and set aside.

  5. In the same pot, add the onions, garlic, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

  6. Add the tomato paste, thyme, and rosemary. Cook for another minute.

  7. Pour in the red wine and beef broth, scraping the bottom of the pot to release any browned bits.

  8. Return the beef roast to the pot, cover with a lid, and transfer to the preheated oven.

  9. Cook for 3-4 hours, or until the beef is tender and easily shreds with a fork.

  10. Once cooked, remove the beef roast from the pot and let it rest for a few minutes.

  11. In the meantime, strain the cooking liquid and discard the vegetables.

  12. In a small bowl, whisk together the flour and 1/4 cup of cold water until smooth.

  13. Pour the strained cooking liquid into a saucepan and bring to a simmer over medium heat.

  14. Gradually whisk in the flour mixture and cook until the sauce has thickened, about 5 minutes.

  15. Slice or shred the beef roast and serve with the red wine sauce.
