How To Make Mint Chocolate Energy Bites
Make gluten-free snacks with these peppermint-flavored energy bites! They’re made with crushed almonds, walnuts, and dates for a healthier treat.

Ingredients
- ½cupwalnuts
- ⅔cupalmonds
- ⅓cupunsweetened cocoa powder
- 2tbsppure maple syrup
- 9Medjool dates,pitted, soaked in warm water for 10 minutes
- ¼tsppeppermint extract
Instructions

Make sure the dates are soft by them soaking in warm water for 10 minutes. Drain, then chop them in half before using.

Pulse the walnuts and almonds in a food processor until they are coarsely chopped. Then add ¼ cup of cocoa powder, maple syrup, dates, and ⅛ of teaspoon peppermint extract. Add more extract as needed.

Process for 2 minutes or until a thick oily “dough” is formed. The dough will be oily from the nuts.

Scrape down the sides of the food processor a few times to get all of the dry ingredients to the bottom. If the dough is too dry, add more maple syrup and/or dates.

Once a dough is formed, scoop the dough, about 1 tablespoon each, and roll it into a smooth ball by hand. If rolling into cocoa powder, spread the remaining 1 tablespoon of cocoa powder onto a plate and roll the moist dough ball around to fully cover.
