How To Make Mexican Shrimp Bites

These Mexican shrimp bites give a fun twist to your Lay’s Classic potato chips made with a great combination of seared shrimp and creamy guacamole.

Serves:

Ingredients

  • 18shrimp,small to medium sized
  • ½tspchili powder
  • 2tspolive oil
  • ¾cupguacamole
  • 18Lay’s Classic potato chips
  • cilantro,chopped, optional garnish

Instructions

  1. Heat the olive oil in a large pan over high heat. Sprinkle the chili powder over the shrimp.

  2. Place the shrimp in the pan and cook, stirring occasionally for 2 to 3 minutes or until the shrimp are pink and opaque,

  3. Place 18 potato chips on a platter. Spoon approximately 2 teaspoons of guacamole onto each one and place a shrimp on top of each chip.

  4. Serve garnished with cilantro, and enjoy!
