How To Make Pheasant Meatballs with Orzo

Ingredients
- 1 lb ground pheasant meat
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh oregano
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1/2 cup diced onion
- 2 cups chicken broth
- 1 cup orzo pasta
- Grated Parmesan cheese for serving
Instructions

In a large bowl, mix together pheasant meat, breadcrumbs, grated Parmesan cheese, parsley, basil, oregano, garlic, salt, and black pepper. Roll into meatballs, about 1 inch in diameter.

Heat olive oil in a large skillet over medium heat. Add meatballs and brown on all sides, about 5 minutes. Remove meatballs from skillet and set aside.

In the same skillet, add diced onions and cook until softened, about 5 minutes. Add chicken broth and bring to a boil. Stir in orzo pasta and reduce heat to low. Cover and simmer for 10 minutes, or until pasta is cooked al dente.

Return meatballs to the skillet with the orzo pasta. Cover and cook for an additional 5 minutes, or until meatballs are cooked through.

Serve the pheasant meatballs with orzo, sprinkled with grated Parmesan cheese.
