These kid-friendly chicken meatballs are a great alternative for when you’re wanting to prepare something light but still tasty for the family.

Ingredients

For Meatballs:

  • 1largeegg
  • 3tbspparsley,freshly chopped
  • 1tbsptomato paste
  • 1clovegarlic,minced
  • ¼cupmilk
  • ½tspsalt
  • ½tspfreshly ground black pepper
  • 1lbground chicken
  • ½cuppecorino Romano cheese,grated
  • ¼cupItalian seasoned bread crumbs,(plus 2 tbsp)

For Glaze:

  • 1½tbsptomato paste
  • 1½tbspextra virgin olive oil
  • 2tspbalsamic vinegar
  • ¾tspsugar

Instructions

  1. Preheat the oven to 325 degrees F.

  2. In a large bowl, combine the egg, parsley, tomato paste, garlic, milk, salt and pepper. Mix well with a wire whisk, making sure the tomato paste is completely dissolved.

  3. Add the ground chicken, grated cheese and breadcrumbs. Use hand to mix the ingredients together; it will be somewhat wet. Form medium-sized balls and place into an ungreased 9×13-in baking dish.

  4. Make the glaze by combining all of the ingredients in a small bowl. Brush evenly over the meatballs.

  5. Bake for about 30 minutes, or until an instant read thermometer inserted into the center of a meatball registers 160 degrees F. Remove from the oven and serve.
