How To Make Chicken Meatballs with Tomato-Balsamic Glaze
These kid-friendly chicken meatballs are a great alternative for when you’re wanting to prepare something light but still tasty for the family.

For Meatballs:
- 1largeegg
- 3tbspparsley,freshly chopped
- 1tbsptomato paste
- 1clovegarlic,minced
- ¼cupmilk
- ½tspsalt
- ½tspfreshly ground black pepper
- 1lbground chicken
- ½cuppecorino Romano cheese,grated
- ¼cupItalian seasoned bread crumbs,(plus 2 tbsp)
For Glaze:
- 1½tbsptomato paste
- 1½tbspextra virgin olive oil
- 2tspbalsamic vinegar
- ¾tspsugar

Preheat the oven to 325 degrees F.

In a large bowl, combine the egg, parsley, tomato paste, garlic, milk, salt and pepper. Mix well with a wire whisk, making sure the tomato paste is completely dissolved.

Add the ground chicken, grated cheese and breadcrumbs. Use hand to mix the ingredients together; it will be somewhat wet. Form medium-sized balls and place into an ungreased 9×13-in baking dish.

Make the glaze by combining all of the ingredients in a small bowl. Brush evenly over the meatballs.

Bake for about 30 minutes, or until an instant read thermometer inserted into the center of a meatball registers 160 degrees F. Remove from the oven and serve.
