How To Make Buffalo Chicken Meatballs
Sink your teeth into these low-fat, baked chicken meatballs that are packed with tender veggies, and served with a creamy dressing, for a healthier meal!

Ingredients
- oil spray
- 1¼lbground chicken
- ¼cuppanko crumbs
- 1large egg
- 2scallions,chopped
- ⅓cupcelery,finely minced
- ⅓cupcarrot,finely minced
- 1garlic clove,crushed
- kosher salt and freshly ground black pepper,to taste
- ⅓cupFranks Hot sauce
- ¼cupblue cheese dressing,optional
- celery leaf,finely chopped, for garnish, optional

Preheat the oven to 400 degrees F. Lightly spray a non-stick baking sheet with oil.

In a large bowl, combine the ground chicken, panko crumbs, egg, scallions, celery, carrot and garlic; season with salt and pepper, to taste.

Using clean hands, mix until combined. Roll the mixture of ⅛ cup each into 26 round meatballs. Place the meatballs onto prepared baking sheet.

Bake for about 16 to 18 minutes, until cooked through and golden.

Place the meatballs in a bowl, add the buffalo sauce and gently toss to combine.

Serve immediately, drizzled with blue cheese dressing, and enjoy!
