How To Make White Chocolate & Ginger Florentines

  • 100g white chocolate
  • 50g unsalted butter
  • 50g light brown sugar
  • 25g plain flour
  • 25g crystallized ginger, chopped
  • 25g flaked almonds

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

  2. In a heatproof bowl, melt the white chocolate and butter together in the microwave or over a pan of simmering water.

  3. Stir in the brown sugar, flour, crystallized ginger, and flaked almonds until well combined.

  4. Drop spoonfuls of the mixture onto the prepared baking tray, spacing them apart to allow for spreading.

  5. Flatten each spoonful slightly with the back of the spoon.

  6. Bake in the preheated oven for 8-10 minutes, or until golden brown around the edges.

  7. Remove from the oven and allow to cool completely on the baking tray.
