How To Make Triple the Ginger Cookies

Ingredients
- 3/4 cup (170g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/4 cup (60ml) molasses
- 1 egg
- 2 1/4 cups (280g) all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons fresh ginger, grated
- 1/4 cup (45g) crystallized ginger, finely chopped
- Additional granulated sugar for rolling
Instructions

Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a large bowl, cream together the butter and sugar until light and fluffy.

Add in the molasses and egg, and mix well.

In a separate bowl, whisk together the flour, ground ginger, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Stir in the fresh ginger and crystallized ginger.

Roll tablespoon-sized portions of dough into balls, then roll each ball in granulated sugar to coat.

Place the cookies onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
