How To Make Rolo-Filled Chocolate Cookies

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 16 Rolo candies


  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.

  3. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Beat in vanilla extract and egg until well combined.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  6. Scoop 1 tablespoon of dough and flatten it in your palm. Place a Rolo candy in the center and wrap the dough around it, forming a ball. Repeat with the remaining dough and Rolos.

  7. Arrange the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.

  8. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.

  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
