
How To Make Iced Pumpkin Spice Cookies
All the flavors you love in fall are in these soft and warm pumpkin spice cookies. They’re also topped with cream cheese icing for a more luscious treat.

Ingredients
For Cookies:
- ½cupunsalted butter,softened
- 1½cupswhite sugar
- 1cuppumpkin,not entire pumpkin
- 1large egg
- ½tbspvanilla extract
- 2½cupsflour
- 1tspbaking powder
- 1tspbaking soda
- 2tspcinnamon
- 1tsppumpkin pie spice
- ½tspsalt
For Frosting:
- ¼cupbutter
- 8ozcream cheese,(1 package)
- 2cupspowdered sugar
- ½tbspvanilla extract
Instructions

Preheat the oven to 350 degrees F.

In a large bowl, beat the butter and sugar together until creamy. Beat in the pumpkin, egg, and vanilla.

On top add the flour, baking powder, soda, spices, and salt. Mix until combined.

Place on a parchment lined baking sheet and bake for 10 to 12 minutes. Remove and allow to completely cool.

Meanwhile, beat together the room temperature butter and cream cheese with the powdered sugar and vanilla. Add the powdered sugar to desired consistency, but note that the frosting is supposed to be very thick and cheesecake-like.
