How To Make Gluten-Free Fudge Cookies

Enjoy guilt-free bites of these rich, gluten-free fudge cookies, made tastier with peanuts and sunflower seeds, for a healthier sweet treat!

Ingredients

  • ½cuphoney
  • ¼cupunsweetened cocoa powder
  • ¼cupcoconut oil
  • ½cuppeanut butter,creamy or crunchy
  • ¼tspsalt
  • 1cupsunflower seeds
  • cuppeanuts,chopped

Instructions

  1. Line a large cookie sheet with a silicone baking mat or parchment paper. Set aside.

  2. In a small saucepan over medium heat, combine the honey, cocoa powder, and coconut oil. Stir until all is melted. The mixture will be very thick.

  3. Allow to boil for about 1 minute. Remove from heat and stir in peanut butter and salt until completely smooth.

  4. Add the sunflower seeds and peanuts, mixing well to make sure all is coated with the chocolate/peanut butter mixture. Using a spoon, drop the mixture into small piles on a prepared baking sheet.

  5. Transfer cookies to the refrigerator and allow to set for about 1 hour.

  6. Serve the cookies immediately and enjoy!
