How To Make Gingerbread Men Cookies with Nutella Hazelnut Spread

These gingerbread men cookies are classic holiday treats, and they’re made tastier with a rich Nutella layer sandwiched between the cookies!

Preparation: 45 minutes
Cooking: 9 minutes
Chill and Cool Time: 1 hour 16 minutes
Total: 2 hours 10 minutes

Ingredients

  • ¼cupbutter,softened
  • ¼cuphoney
  • 3tbspbrown sugar
  • 1egg yolk
  • cupsall purpose flour
  • ½tspbaking soda
  • ½tspgingerbread spice mix
  • 1pinchsalt
  • ½cupNutella® hazelnut spread
  • 3tbspconfectioners’ sugar
  • 1tbsplemon juice

Instructions

  1. In a bowl, mix together the butter, honey and brown sugar. Mix in the egg yolk.

  2. In a separate bowl, mix together the flour, baking soda, gingerbread spice mix and salt. Add to the butter mixture and knead for 1 minute.

  3. Cover with plastic wrap, and refrigerate for 1 hour.

  4. Preheat the oven to 320 degrees F.

  5. On a sheet of parchment paper, roll out dough to ⅙-inch thickness. Using a small gingerbread man cookie cutter or other small shaped-item such as a glass, cut out the gingerbread men.

  6. Transfer the gingerbread men to parchment paper-lined baking sheet.

  7. Bake on center rack for 8 to 9 minutes or until slightly golden.

  8. Let cool on rack for 15 minutes.

  9. Spread Nutella® on the back of one gingerbread man then sandwich with another gingerbread man. Repeat with remaining gingerbread men and Nutella® hazelnut spread.

  10. Mix together confectioners’ sugar and lemon juice, adding juice to the sugar, half a teaspoon at a time, to make a smooth paste.

  11. Transfer to a piping bag and decorate cookies with icing.

  12. Serve and enjoy!
