
How To Make Cowboy Cookies
These cowboy cookies are chewy treats made up of oats, coconut, brown sugar, chocolate chips, and pecans. They’re delicious and easy to do in 30 minutes.

Ingredients
- 1cupunsalted butter,softened
- ¾cupwhite sugar
- ¾cupbrown sugar,packed
- 2large eggs
- 2tspvanilla extract
- 2cupsflour
- 1tspbaking powder
- 1tspbaking soda
- ½tspsalt
- 2cupsrolled oats
- ¾cupsemisweet chocolate chips
- ½cupshredded coconut
- ½cupchopped pecans
Instructions

Preheat oven to 350 degrees F and add the butter, sugar and brown sugar to stand mixer. Mix on medium speed for about 1 to 2 minutes or until light and fluffy.

Add in the eggs and vanilla until fully combined then sift the flour, baking powder, baking soda and salt together and add it into the stand mixer on low speed until just combined.

Add in the oats, chocolate chips, coconut and pecans until just combined.

Add 2 tablespoon-sized scoops of dough to baking sheets and bake for 12 to 13 minutes, letting them cool before removing from the baking sheets.
