  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 cup butter , softened
  • 1 tsp vanilla
  • 1 egg
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cup coconut flakes
  • 1 ½ cup cashews, chopped


  1. Heat oven to 350 degrees.

  2. Beat sugars, butter, vanilla, and egg in a large bowl with an electric mixer on medium speed or with a wooden spoon. Mix until creamy.

  3. Stir in flour, baking soda, and salt. Stir in the coconut and the cashews.

  4. Drop dough by 1/4 cupfuls about 3 inches apart onto ungreased large cookie sheets. Flatten slightly.

  5. Bake for 12-16 minutes or until the edges are golden brown. Cool for 2 minutes before removing from the cookie sheets to wire racks to cool completely. Serve.
