This coconut cashew crunchers recipe is very easy to prepare, making it great for beginners. The coconut flavor complements the light nuttiness of the cashews really nicely as well.

How To Make Coconut Cashew Crunchers

  • 1 cup brown sugar (packed)
  • 1 cup granulated sugar
  • 1 cup butter (softened)
  • 1 tsp vanilla
  • 1 egg
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cup coconut flakes
  • 1 ½ cup cashews (chopped )
  1. Heat oven to 350 degrees.

  2. Beat sugars, butter, vanilla, and egg in a large bowl with an electric mixer on medium speed or with a wooden spoon. Mix until creamy.

  3. Stir in flour, baking soda, and salt. Stir in the coconut and the cashews.

  4. Drop dough by 1/4 cupfuls about 3 inches apart onto ungreased large cookie sheets. Flatten slightly.

  5. Bake for 12-16 minutes or until the edges are golden brown. Cool for 2 minutes before removing from the cookie sheets to wire racks to cool completely. Serve.
