Try this chocolate peanut rounds recipe if you love peanut butter! The hint of cocoa powder added doesn’t make it too sweet so it’s great if you’re not a fan of sweet cookies.
How To Make Chocolate Peanut Rounds
Ingredients
- 1/2 cup butter , at room temperature
- 2/3 cup granulated sugar
- 1/4 cup peanut butter, smooth
- 1 large egg
- 2 tbsp unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 cups all-purpose flour
- 1/2 cup unsalted peanuts, coarsely chopped
Instructions

Beat butter, sugar and peanut butter in a large bowl with an electric mixer until pale and fluffy. Beat in egg, cocoa, baking powder and salt.

With a mixer on low speed, beat in flour until blended to form a dough.

Shape the dough into a log 12 inches long and 1.5 inches thick. Roll in the nuts.

Wrap in plastic wrap or waxed paper, transfer to a cookie sheet and refrigerate for at least 4 hours.

Heat oven to 350 degrees.

Cut the log in 32 slices. Place 1 inch apart on a greased cookie sheet.

Bake for 12 to 15 minutes until the cookies feel firm. Transfer to a wire rack to cool before serving.
