Chocolate Peanut Rounds Recipe

Try this chocolate peanut rounds recipe if you love peanut butter! The hint of cocoa powder added doesn’t make it too sweet so it’s great if you’re not a fan of sweet cookies.

Ingredients

  • 1/2 cup butter , at room temperature
  • 2/3 cup granulated sugar
  • 1/4 cup peanut butter, smooth
  • 1 large egg
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 cups all-purpose flour
  • 1/2 cup unsalted peanuts, coarsely chopped

Instructions

  1. Beat butter, sugar and peanut butter in a large bowl with an electric mixer until pale and fluffy. Beat in egg, cocoa, baking powder and salt.

  2. With a mixer on low speed, beat in flour until blended to form a dough.

  3. Shape the dough into a log 12 inches long and 1.5 inches thick. Roll in the nuts.

  4. Wrap in plastic wrap or waxed paper, transfer to a cookie sheet and refrigerate for at least 4 hours.

  5. Heat oven to 350 degrees.

  6. Cut the log in 32 slices. Place 1 inch apart on a greased cookie sheet.

  7. Bake for 12 to 15 minutes until the cookies feel firm. Transfer to a wire rack to cool before serving.
