  • 2 cups shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp vanilla extract
  • 2 egg whites
  • Pinch of salt
  • 4 oz dark chocolate, melted

Instructions

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

  2. In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.

  3. In a separate bowl, whisk the egg whites with a pinch of salt until stiff peaks form.

  4. Gently fold the egg whites into the coconut mixture until fully incorporated.

  5. Using a spoon or cookie scoop, drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

  6. Bake for 18-20 minutes, or until the edges are golden brown.

  7. Remove from the oven and let cool completely on a wire rack.

  8. Once cooled, dip the bottom of each macaroon into the melted chocolate, allowing any excess to drip off.

  9. Place the dipped macaroons back on the parchment paper-lined baking sheet and refrigerate for about 10 minutes, or until the chocolate is set.

  10. Serve and enjoy!
