Boston Cream Cookies Recipe

In our hometown bakery, they made the best-frosted molasses soft cookies. I loved them! Well, I wanted to try to make some of my own. A relative brought these to a family gathering. These cookies are so similar to the bakery cookies. I asked her for the recipe.


How To Make Boston Cream Cookies

This cookie recipe is sweet and goes well with a hot beverage.

Makes:

Ingredients

  • ½ cup sugar
  • ½ cup shortening
  • ½ cup molasses
  • 1 egg
  • ¼ cup buttermilk
  • ¼ tsp. salt
  • ½ tsp. cinnamon
  • ¼ tsp. cloves
  • ½ tsp. nutmeg
  • ½ tsp. ginger
  • 1 tsp. soda
  • 1 tsp. vinegar
  • 2 ⅛ cups flour

Frosting:

  • 2 Tbsp. butter
  • 2 Tbsp. cream
  • 1 cup sugar
  • 1 tsp. vanilla

Instructions

  1. Cream shortening and sugar.
  2. Add egg and beat well.
  3. Add molasses and beat.
  4. Add buttermilk and beat.
  5. In a cup, add soda to vinegar and mix into batter.
  6. Add sifted dry ingredients.
  7. Drop on cookie sheet by spoonfuls.
  8. Bake at 350 degrees for 10 minutes.

Frosting:

  1. Bring butter and cream to boil and add powdered sugar.
  2. I don't double this recipe because of all the spice.
