
How To Make Açaí Meringue Cookies
These easy-to-make and delicate meringue cookies are topped with a sweet and rich acai berry syrup and puree, for a tastier snack to munch on!

For Meringue Cookies:
- 3egg whites,room temperature
- ½lemon,juiced
- ½tspsalt
- ¾cupsugar,plus an additional ½ cup
- 1tbspacai syrup,or berry syrup
- 1cupwater
- ½cupacai puree,or berry puree
Instructions

In a saucepan, boil ½ cup of sugar, water, and acai puree.

Reduce the heat to simmer and cook until the mixture thickens into a syrup. Add the lemon when thickening.

Let cool before using.

Preheat the oven to 225 degrees F. Line a baking sheet with parchment paper and set aside.

In a bowl, using an electric mixer, beat the egg whites until they are foamy. Add salt and lemon juice, and continue whisking.

Slowly add the ¾ cup of sugar while whisking, and beat until glossy, stiff peaks form.

Spoon the meringue mixture on the parchment sheet, and smooth the top of the meringue with the back of the spoon.

Drizzle about ¼ teaspoon of acai syrup on the meringue and swirl with a toothpick. Repeat for each cookie.

Bake for 90 minutes, until the outside shell becomes stiff, and the meringue has gone from shiny to matte, with the cookie easily lifting off the parchment.
