  • 1 cup raw peanuts
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ cup light corn syrup
  • tsp unsalted butter
  • 1 tsp vanilla


  1. Mix peanuts, corn syrup, and sugar in a large bowl and cover with plastic wrap.
  2. Microwave for 4 minutes on high. Remove, stir and cook for 3 minutes.
  3. Add vanilla and butter and cook for 2 minutes.
  4. Add baking soda, stir and pour on a greased cookie sheet spreading thinly.
  5. Let cool and break brittle into pieces.
