  • 1/2 cup popcorn kernels
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon vanilla extract


  1. Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper.

  2. Pop the popcorn kernels using your preferred method and transfer to a large mixing bowl.

  3. In a saucepan, combine the sugar, butter, corn syrup, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.

  4. Once boiling, continue stirring for 4-5 minutes or until the mixture turns a light golden brown color.

  5. Remove the saucepan from heat and quickly stir in the baking soda and vanilla extract. The mixture will foam up.

  6. Immediately pour the caramel sauce over the popcorn in the mixing bowl. Use a spatula or wooden spoon to quickly and gently toss the popcorn until evenly coated in the caramel sauce.

  7. Spread the coated popcorn onto the prepared baking sheet, spreading it out into an even layer.

  8. Bake in the preheated oven for 45 minutes, stirring every 15 minutes to ensure even cooking.

  9. Remove from the oven and let cool completely. The caramel corn will harden as it cools.

  10. Once cooled, break the caramel corn into smaller pieces and enjoy!
