- 8 oz (225g) bitter chocolate, finely chopped
- 1/2 cup (120ml) heavy cream
- 2 tbsp (30g) unsalted butter
- 1/4 cup (30g) unsweetened cocoa powder
Instructions

Place the chopped bitter chocolate in a heatproof bowl.

In a saucepan, heat the heavy cream and butter over medium-high heat until it starts to simmer.

Pour the hot cream mixture over the chopped chocolate and let it sit for a minute.

Stir the mixture until the chocolate is completely melted and smooth.

Cover the bowl with plastic wrap and refrigerate for about 2 hours or until firm.

Using a melon baller or a tablespoon, scoop out small portions of the chilled chocolate mixture and roll them into balls.
