  • 8 oz (225g) bitter chocolate, finely chopped
  • 1/2 cup (120ml) heavy cream
  • 2 tbsp (30g) unsalted butter
  • 1/4 cup (30g) unsweetened cocoa powder

Instructions

  1. Place the chopped bitter chocolate in a heatproof bowl.

  2. In a saucepan, heat the heavy cream and butter over medium-high heat until it starts to simmer.

  3. Pour the hot cream mixture over the chopped chocolate and let it sit for a minute.

  4. Stir the mixture until the chocolate is completely melted and smooth.

  5. Cover the bowl with plastic wrap and refrigerate for about 2 hours or until firm.

  6. Using a melon baller or a tablespoon, scoop out small portions of the chilled chocolate mixture and roll them into balls.

  7. Roll the truffles in unsweetened cocoa powder until evenly coated.

  8. Place the coated truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes to set.

  9. Serve the bitter chocolate truffles chilled and enjoy!
