Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 teaspoon cream of tartar
  • 2 egg whites
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. In a saucepan, combine the sugar, water, and cream of tartar. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture reaches 240°F (115°C) on a candy thermometer.

  2. In a separate bowl, beat the egg whites until stiff peaks form.

  3. Slowly pour the hot sugar mixture into the beaten egg whites, while continuing to beat on high speed.

  4. Add the vanilla extract and continue to beat until the mixture thickens and becomes glossy.

  5. If desired, fold in the chopped nuts.

  6. Drop spoonfuls of the mixture onto wax paper-lined baking sheets.

  7. Allow the candy to cool and set at room temperature for at least 1 hour before serving.
