Ingredients
- 1 pumpkin bread loaf, trimmed and sliced into rectangular pieces
- 3 eggs
- 1 cup milk
- 2 tsp brown sugar
- 2 tsp ground cinnamon
- 1 tsp vanilla extract
- 2 cups rice puffs, or cornflakes
- 4 tbsp unsalted butter
- 1 cup granulated sugar
- 3 tbsp ground cinnamon
To serve:
- maple syrup, or chocolate sauce
Instructions

Crush cornflakes or rice puffs in a bag, pour into a bowl and, set aside.

Combine granulated sugar and 3 tablespoons of ground cinnamon. Set aside.

Beat together eggs, milk, brown sugar, cinnamon, and vanilla in a bowl.

Heat skillet with about 2 tablespoons of butter. Add more butter as needed.

Dip all sides of the breads into the egg mixture and coat in crushed cornflakes or rice puffs.

Grill on all sides until golden brown in skillet.

Immediately roll in the cinnamon-sugar mixture.
