How To Make Low-Carb French Tortilla Toast

A quick and easy recipe for those who fancy that classic taste of french toast in the morning without the guilt! Made with whole wheat tortillas in place of bread, these scrumptious little morsel of breakfast goodness can certainly be a hit in the morning.

  • 2 whole-wheat tortillas (or low-carb tortillas, cut in 1/4s)
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp water
  • 1 packet Splenda (or other sugar alternative)
  • 1 tsp butter (for frying)
  1. Beat eggs with water until frothy.
  2. Mix in cinnamon and sugar alternative.
  3. Melt butter on a skillet set at slightly higher than medium heat.
  4. Cooking surface is ready when a drop of water will dance.
  5. Dip the tortillas pieces in egg mixture and fry until both sides are golden brown.
  6. Serve with butter and a low-carb store-bought syrup.
  7. Or for an interesting low-carb topping, mix 1 tablespoon of sugar-free jam with 1 and ½ tablespoons of water and microwave for 45 seconds.
