
How To Make Avocado Toasts with Olive Relish, Tomatoes, and Balsamic
Healthy and trendy, avocado toasts have become a breakfast and brunch staple in recent years. For this recipe, they’re served with tomato, capers, & olives.

Ingredients
- 1tbspred onion,chopped
- 2tbsplemon juice
- 1tbspbalsamic vinegar
- 1cupcherry tomatoes,(halved or quartered)
- ¼cupcalifornia green ripe olives,sliced
- 1tbspcapers,drained
- 2tbspfresh parsley,chopped
- ¼tspsalt
- freshly ground black pepper,to taste
- 4slicswhole grain bread,or another bread of choice
- 2avocadoes,halved, pit removed, and sliced
- 4lemon wedges
- 2tbsppine nuts,toasted
Instructions

In a bowl, stir together the red onion, lemon juice and vinegar. Let sit for 5 minutes while chopping the tomatoes.

Add the tomatoes, olives, capers and parsley to the bowl. Stir in salt and pepper to taste.

In a toaster, toast the bread until golden brown, or to the desired doneness.

Top each piece of toast with slices of avocado (left in slices or mashed with a fork), then sprinkle with salt and pepper. Squeeze a lemon wedge over each avocado toast. Top with the olive relish and the pine nuts.

Serve the toasts immediately.
