  • 2 cups rum ‘n’ raisin ice cream
  • 8 cookies of your choice

Instructions

  1. Take out the ice cream from the freezer and let it soften for a few minutes.

  2. Place a scoop of ice cream onto one cookie.

  3. Gently press another cookie on top of the ice cream to create a sandwich.

  4. Repeat with the remaining cookies and ice cream.

  5. Serve immediately or wrap in plastic wrap and freeze for later.
