  • 8 double chocolate cookies
  • 2 cups pistachio ice cream
  • 1/4 cup chopped pistachios

Instructions

  1. Place 4 cookies on a baking sheet.

  2. Scoop 1/2 cup of pistachio ice cream onto each cookie.

  3. Top with another cookie and gently press down to create a sandwich.

  4. Roll the edges of the ice cream sandwiches in the chopped pistachios.

  5. Freeze for at least 1 hour before serving.
